Fungus is an essential part of natural, ecological systems and represents an important protein source in regenerative food systems. This course involves an in-depth look at fungal ecology with a focus on strategies used in mushroom cultivation. Students will explore the potential of mushroom farming and develop a basic understanding of mycology through a series of lectures that explain the life cycle, stages of production, and management techniques involved in mushroom cultivation. This course will also provide hands-on experience in production strategies used for both indoor and outdoor settings.
